Smothered Cabbage


This is the best way to cook cabbage when you want to serve it for its own sake. Butter and onion enhance the cabbage’s sweetness.

Serves 2 or 3.

2 T butter
1 medium onion, thinly sliced (1 rounded cup)
1 lb shredded cabbage (generally less than a small head, about 2 1/2 cups)

1. In a medium saucepan, over medium heat, melt butter and saute onion until golden, about 8 minutes.

2. Add the shredded cabbage and toss to mix it with the onion and coat it lightly with butter.

3. Cover the pot, reduce heat to low, and let steam 8 to 10 minuts, until just tender.

Microwave method: Combine butter and onion. Microwave on high for 2 minutes. Add cabbage, toss well, then cover and microwave on high another 4 to 6 minutes, tossing once or twice. Let cabbage rest 2 minutes before serving.
