1 C long-grain rice
2 C chicken broth
1/4 C thinly sliced green onions
1/2 t minced chipotle chile, canned in adobo sauce

1. Combine rice and broth in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until liquid is absorbed.
2. Stir in green onions and minced chile. Yield: 4 servings.
