This curried rice mix is an interesting complement for plain chicken or pork.
Serves 6.
2 1/2 cups water
1 cup long-grain rice
1 chicken bouillon cube, crumbled
2 Tbsp. dried minced onion
1/4 cup raisins
1/2 tsp. curry powder

In a medium saucepan bring the water to a boil. Add the rice mix. Cover and reduce the heat to a simmer for 20 minutes.

1 lb ground beef, browned and drained
1/2 c Almost Hamburger Helper Mix
1 onion, chopped
2 c water
16 oz tomato sauce
3 c lasagna noodles, uncooked, broken in bits
1/4 c parmesan cheese
2 c mozzarella cheese, shredded

Combine all except mozzarella in large skillet. Bring to a boil, let simmer for 15 minutes or until noodles are cooked. Top with mozzarella. Turn off heat and let cheese melt.

1 lb ground beef, browned and drained
3/4 c water
6 potatoes, peeled and thinly sliced
1 c frozen mixed veggies
1/2 cup Almost Hamburger Helper Mix

Combine all and simmer, covered, until potatoes are tender, about 30 minutes, stirring occasionally. Remove cover and cook until excess water is evaporated.

2 c uncooked egg noodles
4 oz canned mushrooms (optional)
1/2 cup sour cream

Combine all except sour cream. Simmer 20 minutes or until noodles are tender. Stir in sour cream and serve.

1 cup cornstarch
1/4 cup beef bouillon powder
2 tablespoons onion flakes
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon black pepper
2 tablespoons dried parsley
1 tablespoon garlic powder

1 teaspoon white-wine vinegar
1 tablespoon minced shallot
1/2 tablespoon butter
1 tablespoon Dijon mustard
1 teaspoon olive oil
1 boneless, skinless chicken breast half (6 to 8 ounces)
Coarse salt
Ground pepper
4 cups (about 2 1/2 ounces) baby spinach

1. Season chicken with salt and pepper. In a large skillet, heat oil over medium-high heat. Add chicken; cook until browned, turning once, 8 to 10 minutes.
2. Add 1/4 cup water. Reduce heat to medium-low; cover, and simmer until chicken is cooked through, 4 to 6 minutes. Transfer chicken to a plate; cover to keep warm.
3. Make mustard sauce: Add minced shallot to same pan; cook over medium heat, stirring occasionally, until soft, about 3 minutes. Stir in mustard and vinegar; cook 1 minute. Remove from heat. Add butter; swirl pan until incorporated. Stir any accumulated chicken juices into sauce.
4. In a medium bowl, toss spinach with half the mustard sauce. Place chicken on a serving plate; drizzle with remaining sauce. Serve spinach on the side.

8 large chicken leg quarters
Kosher salt
Freshly ground black pepper
3 tablespoons olive oil
1 tablespoon ground cumin
1/2 cup roughly chopped fresh cilantro
Juice of 2 limes
2 cloves garlic, peeled and minced

1. Preheat the oven to 500 degrees.
2. Season the chicken aggressively with salt and pepper, then place, skin-side up, in a shallow baking pan and toss with a drizzle or two of the olive oil. Dust with ground cumin and place in the oven.
3. Roast the chicken until its skin is crisp and a knife inserted and removed from the flesh of the thigh results in clear juices, about 30 minutes, then remove from the oven and allow to rest for 5 minutes.
4. As the chicken cooks, combine the cilantro, lime juice, garlic and the remaining olive oil to make the gremolata. Sprinkle the gremolata over the chicken and serve, ideally with rice and beans. Serves 8.

Sweet citrus balances the spicy punch of chipotle in this perfectly seasoned dish.
1 C orange juice
2 T light brown sugar
4 cloves garlic, minced
3 chipotle peppers in adobo, seeds removed, peppers minced
1/2 t kosher salt
2 T vegetable oil
1 1/2 lb pork tenderloin, silverskin removed, cut into 1″ pieces
1 small onion
1 orange

1. Whisk together orange juice, sugar, garlic, peppers, salt and oil. Toss meat in marinade, cover and refrigerate in a glass or plastic dish, 3 hr or overnight.
2. When ready to cook, heat grill to medium. Cut onion and orange into 1″ pieces. Discard marinade and thread meat, onions and oranges onto skewers. Oil grill grates and cook kabobs, turning, until meat is done, 10 to 12 minutes.

6 small ripe peaches, thinly sliced
1 red onion, halved, thinly sliced
1 cup pecan pieces, toasted
1 cup shredded Parmesan cheese
8 oz raspberry vinaigrette dressing

Toss all ingredients lightly in large serving bowl. Serve immediately.
