1 lb. white fish fillets (halibut, cod or tilapia)
1 can (14-1/2 oz.) diced tomatoes, undrained
1/4 cup Italian dressing
1/2 cup shredded mozzarella cheese

Mix rice and water in 1-1/2 qt. microwaveable casserole. Place fish in single layer over rice; top with tomatoes and dressing. Cover.
Microwave on HIGH 10 min.; top with cheese.
Microwave, uncovered, 2 min. or until fish flakes easily with fork and rice is tender.

1/3 C raisins
1/2 C boiling water
1/4 C ketchup
3 T Worcestershire sauce
2 T Dijon mustard
2 T white vinegar
Salt and pepper

Combine the raisins and water in a bowl and let sit, covered, until the raisins are plump, about 5 minutes. Puree the raisin mixture, ketchup, Worcestershire sauce, mustard, and vinegar in a blender until it is smooth. Season with salt and pepper. (The sauce can be refrigerated in an airtight container for 1 week.)
Makes 1 1/4 cups.

3/4 cup brown sugar
1 cup buttermilk
1/2 cup canola oil
2 teaspoons vanilla
2 eggs
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 tablespoon ground cinnamon
1/2 teaspoon salt
3 cups finely chopped unpeeled apples (3 medium)
1 cup chopped walnuts

1. Heat oven to 350°F. Spray bottom only of 13×9-inch pan with cooking spray.
2. In large bowl, beat sugars, buttermilk, oil, vanilla and eggs with electric mixer on low speed 20 to 30 seconds or until blended. Add all remaining ingredients except apples and walnuts; beat on low speed about 1 minute or until blended. Stir in apples and walnuts. Spread batter in pan.
3. Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 1 hour.

1/2 cup Caesar dressing

Heat grill to medium-high heat.
Grill steak 5 min. on each side or until done (160°F). Transfer to cutting board; let stand 5 min.

1 lb ground beef
1/3 C dry bread crumbs
1 small onion, finely chopped
1 egg, beaten
1 T vegetable oil
1 1/2 C sliced mushrooms

1. Mix 1/4 C soup, beef, bread crumbs, onion and egg thoroughly. Shape firmly into 4 patties, 1/2″ thick.
2. In skillet over medium-high heat, heat oil. Cook patties until browned. Set patties aside. Pour off fat.
3. Add remaining soup and mushrooms. Heat to a boil. Return patties to pan. Cover and cook over low heat 20 minutes or until patties are done (160 degrees).

For the Filling:
3 1/2 pounds ripe peaches (about 11 medium peaches)
1 tablespoon fresh lemon juice
2 tablespoons all-purpose flour

1. For the topping: Preheat the oven to 375 degrees with rack in the middle position. In a large bowl, whisk together flour, oats, sugar, cinnamon, and salt. Stir in oil and water until blended. Topping will look like clumpy wet sand. Stir in almonds and set aside.
2. For the filling: In a large saucepan of boiling water, working in batches, blanch peaches for 1 minute. Remove them with a slotted spoon and transfer to a bowl of cold water. When cool enough to handle, peel off skin. Halve, pit, and cut peaches into 1/2-inch wedges.
3. In a medium bowl, mix together peaches, lemon juice, flour, and sugar. Place filling in an 8-inch square baking pan. Sprinkle topping evenly over peaches. 1 teaspoon baking soda

1/2 cup sugar
1/4 cup butter
1 egg white
1/2 cup 1% milk
3/4 cup marshmallow creme

1. Heat oven to 425°F.
2. In medium bowl, combine flour, cocoa, baking soda and salt.
3. In large bowl, beat sugar, margarine and egg white with electric mixer on medium speed 2 minutes or until fluffy. Stir in flour mixture. Stir in milk just until blended.
4. Drop dough by rounded tablespoons onto large ungreased baking sheets to make 32 cookies. Bake 5 minutes or until tops spring back when lightly touched.
5. Place baking sheets on a rack to cool completely. Spoon about 2 teaspoons marshmallow crème on bottoms of 16 cookies. Top filled cookies with the remaining 16 cookies.

1 can (10-3/4 oz.) cream of mushroom soup
1 cup frozen peas
1/2 cup shredded colby jack cheese, divided

Cook noodles in medium saucepan as directed on package.
Meanwhile, cook chicken in medium nonstick skillet sprayed with cooking spray on medium-high heat 5 min. or until done, stirring occasionally. Add neufchatel and milk; cook and stir 1 to 2 min. or until neufchatel is melted and mixture is well blended. Add soup and peas; cook 5 min., stirring occasionally.
Drain noodles; return to saucepan. Add chicken mixture and half the shredded cheese; cook until cheese is melted and mixture is well blended. Sprinkle with remaining cheese.
Note: Substitute frozen chopped broccoli or your favorite blend of frozen mixed vegetables for the peas.

2 squares semi-sweet chocolate, chopped
1 tablespoon butter
Dash of vanilla extract
1 large navel orange, peeled and sectioned

Line baking sheet with wax paper. Melt chocolate in top half of double boiler over simmering water. When melted, remove from heat, and stir in margarine and vanilla.
Dip end of each orange section about halfway into melted chocolate.
Place sections on baking sheet and refrigerate for about 15 minutes or until chocolate sets.
