Swiss-Style Family Cereal

Makes 8 cups

2 1/2 C rolled oats
1 1/2 C dried apples, very finely chopped
1 C raw wheat germ
1 C chopped almonds or hazelnuts
3/4 C brown sugar
1/3 C raisins

Preheat oven to 350 degrees. Mix together all ingredients except raisins. Spread mixture on large, rimmed, ungreased baking pan and bake 5 or 6 minutes or until slightly toasted, stirring now and then. Let cool thoroughly; add raisins; store in airtight container.

Crunchy Chocolate Delights

Preparation: 20 min.plus the cooling time
Yield: 24 servings

1/2 cup roasted peanuts
1 package (8 squares) semisweet chocolate
2 1/2 cups corn flakes
1/2 cup dried cranberries
24 holiday marshmallows

1. Peanuts crushed into pieces, put them aside. Cover a baking sheet with waxed paper. Melt chocolate in microwave in a large bowl as directed on package.

2. Stir in chips, cranberries and peanuts; toss gently until evenly coated with chocolate.

3. Use a spoon to distribute 24 piles cereal mixture into prepared pan on. Top each with a marshmallow. Refrigerate 1 hour or until firm.

Crunchy Garlic Chicken

Prep Time: 30 minutes
Start to Finish: 55 minutes
6 Servings

1/4 C butter, melted
2 T milk
1 T chopped fresh chives or parsley
1/2 t salt
1/2 t garlic powder
2 C cornflakes (or other flake cereal), crushed (1 C)
3 T chopped fresh parsley
1/2 t paprika
6 boneless skinless chicken breast halves (about 1 3/4 lb)

1. Heat oven to 425 degrees. Spray 9 x 13″ pan with cooking spray. In shallow dish, mix 2 T of the butter, the milk, chives, salt and garlic powder.

2. In another shallow dish, mix crushed cereal, parsley and paprika. Dip chicken into milk mixture; then coat lightly and evenly with cereal mixture. Place in pan. Drizzle with remaining 2 T butter.

3. Bake 20 to 25 minutes or until juice of chicken is clear when center of thickest part is cut (170 degrees).

Spicy Chili Bean Burgers

makes:5 sandwiches

1 cup Fiber One original bran cereal
1 can (15 or 16 oz) spicy chili beans in sauce, undrained
1/2 cup quick-cooking oats
1/4 cup chopped green onions (4 medium)
1 egg, slightly beaten
5 whole wheat burger buns, split
1 1/4 cups washed fresh baby spinach leaves
5 slices tomato

1. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet.

2. In medium bowl, mash beans with fork until no whole beans remain. Add cereal, oats, onions and egg; mix well. Shape mixture into 5 patties, each about 3 1/2 inches in diameter.

3. Spray 12-inch skillet with cooking spray. Add patties; cook over medium heat about 10 minutes, turning once, until brown.

4. For each sandwich, place 1/4 cup spinach leaves and 1 tomato slice on bottom half of bun; top with bean burger and top half of bun.

High Altitude (3500-6500 ft): Cook patties over medium-high heat about 10 minutes.

Mixed-Berry Coffee Cake

makes:8 servings

1/3 cup brown sugar
1/2 cup buttermilk
2 tablespoons canola oil
1 teaspoon vanilla
1 egg
1 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1 cup mixed berries, such as blueberries, raspberries and blackberries or frozen berries (do not thaw)
1/4 cup low-fat granola, slightly crushed

1. Heat oven to 350°F. Spray 8-inch or 9-inch round cake pan with cooking spray.

2. In large bowl, mix brown sugar, buttermilk, oil, vanilla and egg until smooth. Stir in flour, baking soda, cinnamon and salt just until moistened. Gently fold in half of the berries. Spoon into pan. Sprinkle with remaining berries and the granola.

3. Bake 28 to 33 minutes or until golden brown and top springs back when touched in center. Cool in pan on cooling rack 10 minutes. Serve warm.

Fish Strips

Serves 4.

1/2 C milk
3/4 C crushed cornflakes
1/4 C grated Parmesan
1/2 t garlic powder
1 lb tilapia
Cooking spray

Pour milk into a small bowl. In another shallow bowl, combine cornflakes, Parmesan and garlic powder.

Cut tilapia into 1 1/2″ strips. Dunk fish strips into milk, then dredge in cornflake mixture to coat.

Bake in a 400 degree oven on a foil-lined pan coated with cooking spray for 9 to 12 minutes until cooked through.
