Spiced Tea

4 servings

1 T loose tea
6 cloves
Approximately 1 square inch orange peel, cut into small pieces
3 C boiling water

Place ingredients in tea ball and immerse in boiling water. Steep as usual.

Cherry-Berry Tea Smoothies

Serves 4

3/4 cup water
2 Rooibos tea bags
6 ounces silken tofu
10 ounces (2 cups) frozen sweet cherries
6 ounces (1 cup) frozen grapes
3 ounces (1/2 cup) frozen blueberries

1. Bring water to a simmer. Immediately remove from heat, and add tea bags. Let steep, uncovered, for 8 minutes. Discard tea bags. Refrigerate tea until cold, about 40 minutes.

2. Puree tea, tofu, and fruit in a blender until smooth, and serve cold.

Honey-Green Tea Granita

Honey-Green Tea Granita

4 cups water
¼ cup honey
¼ cup granulated sugar
2 green tea bags or 2 tbsp. fresh tea leaves

Bring the water, honey, and sugar to a boil in a medium saucepan. Add tea bags and remove from heat. Allow to cool. Remove tea bags and refrigerate until chilled (about 30 minutes). Pour mixture into a shallow freezer-proof container. Freeze for about an hour or until lightly frozen around the sides. With a fork, beat frozen granita well to break up ice crystals. Return to freezer and continue to beat every 30 minutes until the mixture resembles soft snow (about 2 hours total).
