Ham and Asparagus Strata

The savory bread pudding called strata has become one of America’s favorite egg casseroles. Strata means layers and layering is almost all you have to do to make one. Once you’ve poured on the custard, bake or microwave the strata right away or cover and refrigerate it for several hours or even overnight. With a cold mixture, allow a little more cooking time to serve up a quick meal whenever you need it the next day.

Makes 6 Servings

Cooking spray
12 to 16 (1/2″ thick) slices French or Italian bread (about 4 oz)
1 C (4 oz) shredded low-moisture part-skim mozzarella or Italian blend cheese, divided
1 C (4 oz) chopped cooked lean ham, divided
8 oz fresh asparagus spears, cut into 1″ pieces (about 2 C)
6 eggs
1 C skim or low-fat milk
2 T lemon juice
1/4 t garlic powder

Even coat 8″ square baking dish with spray. Layer half of the bread slices on bottom of dish. Sprinkle with 1/2 C of the cheese, 1/2 C of the ham and 1 C of the asparagus pieces. Cover with the remaining bread slices, laying them flat or in a shingled pattern. Sprinkle with the remaining cheese, ham and asparagus pieces. In medium bowl, beat together eggs, milk, lemon juice and garlic powder. Pour evenly over layers. Cover with plastic wrap.

Microwave on full power 5 minutes. Microwave on 50% power until thermometer inserted near center reads 160 degrees and/or knife inserted near center comes out clean, about 10 to 12 minutes.

OR

Cover dish with aluminum foil instead of plastic wrap. Bake in preheated 350 degree oven until thermometer inserted near center reads 160 degrees and/or knife inserted near center comes out clean, about 40 to 45 minutes.

Pear Upside-Down Cake

Preparation: 20 minutes
Total: 55 minutes
Yield: 16 servings

3 fresh pears (1 lb), peeled
3/4 C brown sugar
1 t pumpkin pie spice
1/2 C dried cranberries
1 package (2-layer) yellow cake mix
1 package (3.4 oz) instant vanilla pudding
4 eggs
1 1/4 C water
1/4 C oil
2 C whipped topping, thawed

Preheat oven to 350 degrees. Cut pears in half lengthwise, remove the core; cut in lengthwise slices 1/4″ thick. Arrange them on the bottom of a 9 x 13″ pan, sprayed with cooking spray. Mix the sugar and the spice; sprinkle over the pears. Top with the cranberries.

Beat well the next 5 ingredients with an electric mixer; pour in the pan. Bake 35 minutes or until a toothpick inserted in the center comes out clean. Let cool 10 minutes. Run a knife around the edge. Put a serving plate on top of the cake; invert. Remove the pan with care. Let cool slightly. Serve with whipped topping.

Triple Chocolate Chocoflan

Preparation: 25 minutes
Bake: 1 hour 30 minutes
Total: 4 hours 55 minutes incl. cooling
Yield: 24 servings

1/2 cup chocolate syrup
1 package (2-layer) chocolate cake mix
1 cup water
1/3 cup oil
7 eggs, divided
1/2 cup sour cream
1 can (12 oz) evaporated milk
4 squares semisweet chocolate, melted
1 package (8 oz) cream cheese, cubed, softened
1 cup sugar
1 cup whipped topping, thawed

1. Preheat oven to 375 degrees. Spray a 12-cup Bundt pan with cooking spray; pour in chocolate syrup.

2. Beat cake mix, water, oil and 3 eggs with an electric mixer for 2 minutes or until well blended. Stir in sour cream and pour over the syrup in the cake pan.

3. Blend evaporated milk with chocolate, cream cheese, remaining eggs and sugar. Carefully spoon the mixture over the cake batter. Cover with foil sprayed with cooking spray.

4. Put the cake pan in a larger pan and level. Add enough water to larger pan so that the cake pan is immersed 2 inches.

5. Bake for 1 hour 30 minutes or until a toothpick inserted near center comes out clean. Let cool completely in pan on wire rack. Refrigerate for 2 hours. Invert cake onto a plate and take off the mold.

6. Serve with whipped topping.

Goat Cheese and Roasted Corn Quesadillas

Browning the corn caramelizes its sugars and deepens the taste of this dish. If you have fresh cilantro on hand, chop two tablespoons and stir it into the salsa. Serve with yellow rice and seasoned black beans for a tasty vegetarian meal.

Serves 4.

1 C fresh corn kernels (about 1 large ear)
2/3 C (5 oz) goat cheese, softened
8 (6″) corn tortillas
1/4 C chopped green onions (about 1)
10 T bottled or homemade salsa verde, divided

1. Heat a large nonstick skillet over medium-high heat. Add corn; saute 2 minutes or until browned. Place corn in a small bowl. Add goat cheese to corn; stir until well blended. Divide corn mixture evenly among 4 tortillas; spread to within 1/4″ of sides. Sprinkle each tortilla with 1 T green onions. Drizzle each with 1 1/2 t salsa; top with remaining 4 tortillas.

2. Heat pan over medium-high heat. Coat pan with cooking spray. Place 2 quesadillas in pan; cook 1 1/2 minutes on each side or until golden. Remove from pan; keep warm. Wipe pan clean with paper towels; recoat with cooking spray. Repeat procedure with remaining quesadillas. Cut each quesadilla into 4 wedges. Serve with remaining 8 T salsa.

Asian-Marinated Flank Steak

The warmth of nutmeg helps round out the sweet, salty and tangy marinade. Try it with grass-fed flank steak, if available. Serve this dish with steamed sugar snap peas and rice or soba noodles.

Serves 4.

3 T hoisin sauce
2 T water
2 T rice vinegar
1 T low-sodium soy sauce
2 t grated peeled fresh ginger
1 t dark sesame oil
1/4 t freshly grated nutmeg
1/8 t crushed red pepper
2 garlic cloves, minced
1 (1 lb) flank steak, trimmed
Cooking spray

1. Combine first 9 ingredients in a small bowl. Reserve 1/4 C hoisin mixture; spoon remaining mixture into a large zip-top plastic bag. Add steak to bag; seal and marinate in refrigerator 24 hours, turning bag occasionally. Remove steak from bag, discard marinade.

2. Prepare grill or grill pan to medium-high heat.

3. Place steak on grill rack coated with cooking spray; grill 4 minutes on each side or until desired degree of doneness. Let stand 5 minutes. Cut steak diagonally across grain into thin slices. Serve with reserved 1/4 C sauce.

Barley and Beef Soup

Make this soup the night before to allow time for its flavors to develop. Pour hot servings into a thermos to take for lunch, or reheat individual portions in the microwave as needed. Serve the soup with crusty bread or crackers.

Serves 6.

Cooking spray
2 C chopped onion (about 1 large)
1 lb chuck steak, trimmed and cut into 1/2″ cubes
1 1/2 C chopped peeled carrot (about 4)
1 C chopped celery (about 4 stalks)
5 garlic cloves, minced
1 C uncooked pearl barley
5 C fat-free, less-sodium beef broth
2 C water
1/2 C tomato puree
1/2 t kosher salt
1/4 t freshly ground black pepper
2 bay leaves

1. Heat a large Dutch oven over medium heat. Coat pan with cooking spray. Add chopped onion and beef to pan; cook 10 minutes or until onion is tender and beef is browned, stirring occasionally. Add chopped carrot and chopped celery to pan; cook 5 minutes, stirring occasionally. Stir in garlic; cook 30 seconds. Stir in barley and remaining ingredients, and bring to a boil. Cover, reduce heat, and simmer 40 minutes or until the barley is done and vegetables are tender. Discard bay leaves.

Blueberry Streusel Muffins

Active time: 30 minutes
Total time: 70 minutes
Makes 6 jumbo muffins.

1 3/4 C all-purpose flour
1 C blueberries
1/4 C yellow cornmeal
2 t baking powder
1/2 t salt
3/4 C sugar
2 eggs
1/2 C milk
1/3 C (5 T + 1 t) unsalted butter, melted
3 T lemon juice
Streusel:
2/3 C all-purpose flour
1/3 C light brown sugar
1/2 t ground cinnamon
1/4 C (4 T) unsalted butter, softened
Drizzle:
1/2 C confectioners’ sugar
2 to 2 1/4 t milk

1. Heat oven to 375 degrees. Line 6 jumbo-size muffin cups with paper liners or coat with nonstick cooking spray.

2. Make streusel: With fork or fingers, mix flour, brown sugar and cinnamon in a bowl. Add butter until blended and crumbly.

3. Place flour in medium bowl. Remove 1 T and toss with blueberries in a small bowl. To remaining flour, add yellow cornmeal, baking powder and salt; mix well. In another bowl, whisk sugar and eggs, milk, melted butter and lemon juice.

4. Stir wet ingredients into dry ingredients until just blended; fold in blueberries.

5. Spoon about 1/2 C batter into each muffin cup; crumble streusel on top. Bake 30 minutes or until wooden pick inserted in centers comes out clean. Let cool 5 minutes in pan, removed muffins from pan and cool on wire rack.

6. Make drizzle: Mix 1/2 C confectioners’ sugar and 2 to 2 1/4 t milk until smooth and pourable. Drizzle over muffins.

Zucchini Muffins

These are something healthy you can grab for breakfast on the way out the door. You can add raisins, nuts or dried cranberries for variety.

Makes 12.

4.75 oz whole-wheat flour (about 1 cup)
3 oz all-purpose flour (about 2/3 cup)
1/2 C sugar
1 t ground cinnamon
1 1/4 t baking powder
1/2 t baking soda
1/4 t salt
1 1/3 C shredded zucchini
1/2 C milk
2 T canola oil
2 T honey
1 egg
Cooking spray
1 T sugar
1/4 t ground cinnamon

1. Preheat oven to 400 degrees.

2. Weigh or lightly spoon flours into dry measuring cups; level with a knife. Combine whole-wheat flour and next 6 ingredients (through salt) in a large bowl; stir with a whisk. Combine zucchini, milk, oil, honey and egg in a small bowl; stir until blended. Make a well in center of flour mixture; add milk mixture, stirring just until moist. Spoon batter into 12 muffin cups coated with cooking spray.

3. Combine 1 T sugar and 1/4 t cinnamon; sprinkle over tops of muffins. Bake at 400 degrees for 15 minutes of until golden. Remove from pan immediately; cool on a wire rack.

Feta and Green Onion Couscous Cakes over Tomato-Olive Salad

This recipe is a great way to highlight the flavor of fresh summer tomatoes.

Serves 2.

Cakes:
1/3 C uncooked whole-wheat couscous
1/2 C boiling water
1/4 C (1 oz) crumbled feta cheese
3 T egg substitute
2 T finely chopped green onions
1/8 t freshly ground black pepper
2 t olive oil
Cooking spray
Salad:
2/3 C chopped seeded tomato
2 T chopped pitted kalamata olives
2 T chopped fresh parsley
2 t red wine vinegar
1/2 t olive oil
1/8 t freshly ground black pepper
3 C mescalun or other gourmet salad greens

1. To prepare cakes, place couscous in a medium bowl; stir in 1/2 C boiling water. Cover and let stand 5 minutes or until liquid is absorbed. Fluff with a fork. Cool slightly. Add cheese and the next 3 ingredients (through pepper). Heat 2 t oil in a large nonstick skillet coated with cooking spray over medium-high heat. Spoon about 1/3 C couscous mixture into 4 mounds in pan. Lightly press with a spatula to flatten to 1/2″. Cook 2 minutes or until lightly browned. Coat tops of cakes with cooking spray. Carefully turn cakes over; cook 2 minutes or until heated.

2. To prepare salad, combine tomato and next 5 ingredients (through 1/8 t pepper). Arrange 1 1/2 C greens on each of 2 plates. Top each serving with 1/2 C tomato mixture; arrange 2 cakes over tomato mixture.

Spicy Orange Pan Sauce

Serves 4.

Cooking spray
1 T grated ginger
2/3 C chicken broth
3 T orange marmalade
1 1/2 T soy sauce
1 1/2 T fresh lemon juice
3/4 t sriracha sauce

Heat a skillet over medium-high heat; coat with cooking spray. Add ginger; saute 1 minute, stirring constantly. Stir in chicken broth, orange marmalade and soy sauce; bring to a boil. Cook until mixture is slightly thick. Stir in lemon juice and sriracha sauce. Serve over Skillet Chicken.
